So I made some ice cream. I used erythritol and Splenda to sweeten it, plus a little xanthan gum for texture. It didn't come out a big brick like I feared, but it was definitely harder and somehow drier and fluffier than regular ice cream. Sugar is pretty important to the process, and I knew that when I started out, but I believe I will find a way to make good scoopable ice cream without the carbs. I did the math on this batch, by the way, and it comes out to 2.6 grams of carbohydrate per serving. And no bad GI effects. So there. I think for under 3 grams I can manage to leave it on the counter for a couple minutes to soften.

I made vanilla, and used half-and-half where the recipe called for milk. By the time we eat our way through this quart and a half I should have figured out what to do to make it better next time. I have a concept in mind, but want to try it before I post about it.

I'm also going to make frozen yogurt out of my superthick half-and-half yogurt sometime. I think I'll make raspberry flavor, and dip it in chocolate...remember Danny bars? I really liked those.

Speaking of discontinued blasts from the past, I need pint containers for this stuff, and would give my eyeteeth, my eyeteeth for a couple of Frusen Gladje containers! God, remember how many I had back then? I used them to store my stash, to dip paintbrushes in, to grow seedlings in.... Where did they all go?

Well, the exercise thing is working. I've had losses for the last three days in a row and am back to the lowest point I'd reached before. This is the same weight as I was ten years ago after I'd gone to the gym 5 days a week and worked out hard for two hours every morning for over a year. The difference this time is, I don't fall asleep after lunch every day. I also feel generally more healthy, which is kind of cool considering it's a decade later. I think if I keep the karate thing up I'll be in better shape than I was as a teenager, which ain't saying much, of course, but it's kind of neat.

I think the Dreamfields pasta is ok, but need to test it again. I got a beige stick that night, but the next night was back to a happy pink. There may have been other factors at play then, so I will do further research.

Thursday, May 20

Tonight we finally tried the Dreamfields linguine. I feel like I've dropped acid or something, the way I'm watching my body for signs of strange things happening. If this stuff is for real, it's a revolution, since it's real pasta, nothing like the vile soy particleboards that have been called low-carb pasta in the past. It kind of gave me the creeps eating it; it's really unbelievable.

Gotta admit, though, I didn't miss pasta all that much, and was surprised to find that having it wasn't all that special. If the stuff backfires or kicks me out of ketosis or something, I'll shrug and move on. I'm happy with the whole Atkins thing with or without it.

If it works out okay, on the other hand, I'm totally making George Stella's shrimp scampi to serve on it. GOD I can't wait to have the kitchen back up and running. Cooking on a single hotplate just suuuuuuuuuucks.

Hm. Time for a progress report, I guess. I've been kicking the same three or four pounds around for a while now. It might be because I'm being very bad and eating lots of Atkins Advantage bars, which are known to cause people to stall. I'm hooked on them, though, they're really the perfect breakfast these days while we don't have a kitchen. And they're just delicious, especially the mocha one and the Chocolate Decadence.

I'm also building muscle, though; I've been more active lately than I've been since I was in high school. I'm pretty sure the general trend remains downward, so I'm not going to sweat it. But for what it's worth, that's where I am today. If my weight starts going back up, I'll kick out the bars and clean up my act.

Wow, that's a first. I got 10000 steps in today without leaving the house. Most of them were from going up and down stepladders and moving things out of the kitchen; a million little trips add up.

Dragged B into doing some yoga at the end of the night. I think we both really appreciated the stretching, and the quiet, and I think we'll feel better for it tomorrow.
