Thursday, August 5![]() If you want to follow along at home, get the Ben & Jerry's book. For the ice cream, we combined "Ben's chocolate" with "Jerry's chocolate" to get the superstrong chocolate base. Naturally, the Master Blend substitutes for the sugar. Then just chop up a bunch of nuts and sugarfree candy bars. I'm going to get some of the La Nouba white chocolate bars for next time. La Nouba dark chocolate bars are by far the best sugarfree candy I've had, and I bet they'll do just fine with the white. They also make a sour cherry preserve which is just fucking celestial over cheesecake ice cream. I see on their site that they're going to make low carb Belgian waffles. I believe if anybody can pull that off, they can. I hope they're the kind with the embedded syrup like you get on the streets in Belgium, and not just deep waffles...though that would probably be okay too. Yesterday we made blueberry ice cream. We cooked half the berries down a little with Splenda and lemon juice, then added them to the sweet cream base and let that age overnight. Churned that all up, then added the rest of the berries at the last minute. We also threw a few fresh berries on each dish at serving time. Pretty darn good, but the jury is still out on the frozen berries. They stayed intact throughout the process, so you keep biting into frozen blueberries. Don't get me wrong, I've enjoyed frozen blueberries in the past—most notably the night before our prom when pal L and I ate a whole bag and then realized that our mouths were dyed blue—but I'm not sure if I like the texture in the ice cream environment. I think what you'd normally do is macerate them with sugar, which changes their structure a bit so you don't get the ice crystals. Unfortunately, Splenda doesn't have the same effect. I'm going to try Erythritol or Maltitol next time, and mash them up a bit to break the skins and get the molecular party started. In any case, the ice cream was a lovely violaceous hue, and the fresh berries combined well with the ice cream. I'll do this one again.
