I can't figure out where I got this recipe from. If it's yours, please let me know so I can give you the dap you deserve!
Comments in parentheses are mine.

Try these, they're good! Don't cook your "condensed milk" until it's too thick though, or it won't seep down into the layers!

HEROIN BARS
1/4 C butter (if you don't use salted butter, don't forget to throw in a good pinch of salt!)
1 C ground pecans--grind in blender in 1/4 cup batches until meal/flour like
2 TBL Splenda or a few drops stevia concentrate or Splenda concentrate (Sweetzfree--though I don't think you need this)
1 C unsweetened shredded coconut
1 C coarsely chopped dark sugar free chocolate (I used 4 Z-carb bars)
1 C chopped walnuts
1 1/2 C low carb sweetened condensed "milk" (a half batch of the following recipe is perfect)

Preheat oven to 325
Melt butter in 9x9 or 8x8 pan in oven. If using liquid sweetener, add to butter, it not add sweetener to pecans. Mix pecan meal and spread evenly over melted butter. Layer rest of ingredients evenly in order as shown. The condensed "milk" should cover and seep down into the layers. Bake for 30-40 minutes, cool completely and refrigerate until really cool.

When well chilled cut into 16 squares. (I cut into 32)

4 net carbs each (2 if you cut them small like I did)

Per serving 289 Cal, 31 gr Fat, 4 gr Carb, 2 gr Fiber, net carbs 2, 4 gr. Protein (this doesn't add up but whatever)


SWEETENED CONDENSED "MILK"
2 1/2 C heavy whipping cream
6 egg yolks
1 C Splenda (adds 24 carbs) or 1/4 tsp. stevia concentrate (I used Sweetzfree)
2 TBS DiabetiSweet --optional (I didn't use it. I may have used a T of maltitol but I don't think I did.)

Whisk all ingredients together in a saucepan. Cook on low heat, stirring constantly until it starts to thicken. (IMPORTANT:)Do not let this get to pudding consistency. Depending on your ultimate recipe plans, a dash of vanilla can be helpful. If you don't use the DiabetiSweet add the equivalent of 2 TBS sweetness of artificial sweetener. Store in lidded plastic container and refrigerate. This can be used in recipes calling for sweetened condensed milk. Use within 10 days.

Per 1 C serving: 967 Cals, 101 gr Fat, 7 Carbs, 0 gr Fiber, net carbs 7, 10 gr Protein

Hm. That didn't last long. Maybe it's muscle, maybe it's period, but I hit my threshold already so I'm back to counting everything up with Diet Sleuth, at least until I leave on Tuesday.

Thursday, September 16

All that cooking that I talked about on the other side today was strictly legal! All low-carb, all sugar-free, and no trans fats. Just good eatin'.

I've decided to stop counting up everything I eat every day. I didn't worry about it last week while traveling and it worked out fine; I lost two pounds. So I think I know what I should be doing. I'll still keep an eye on the scale; if it goes up, I'll get back to punching it in. I do want to break away from that, though. It's been a useful tool this whole time and a great way to stay accountable, but if I'm going to eat this way forever I need to ditch the training wheels and trust myself to do it right.

Got back on the scale after a week of eating anything I wanted and not keeping track of carbs, and I'm down a pound from when I left! It's probably just dehydration, but it's a new low and I'll take it. Gotta love that.
